Smothered Chops:
1 cup all-purpose flour
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon cayenne
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 spare rib chops
1/4 cup olive oil
1 cup chicken broth
1/2 cup buttermilk
Chopped fresh flat-leaf parsley, for garnish
Put the flour in a shallow platter and add the onion powder, garlic powder, cayenne, salt, and pepper; mix with a fork to distribute evenly. Pat the pork chops dry with paper towels to remove any moisture and then dredge them in the seasoned flour; shaking off the excess.
Heat a large saute pan or cast iron skillet over medium heat and coat with the oil. When the oil is nice and hot, lay the pork chops in the pan in a single layer and fry for 3 minutes on each side until golden brown. Remove the pork chops from the pan and add a little sprinkle of seasoned flour to the pan drippings. Mix the flour into the fat to dissolve and then pour in the chicken broth in. Let the liquid cook down for 5 minutes to reduce and thicken slightly. Stir in the buttermilk to make a creamy gravy and return the pork chops to the pan, covering them with the sauce. Simmer for 5 minutes until the pork is cooked through. Season with salt and pepper and garnish with chopped parsley before serving.
Apple Chops:
2 pounds pork chops
1 pound sauerkraut (rinsed)
3/4 cup onion, julienned
1 1/2 cups Granny Smith apple, thinly sliced
2 cups mild stock
1 cup white wine
2 tablespoons caraway seeds (optional)
1 tablespoon juniper berries
Salt and pepper
1 tablespoon oil for cooking
Heat the oil in a large heavy pot. Season the pork chops with salt and pepper. Sear the pork chops on both sides, remove from the pot and set aside. Add the apples and onions to the pot and cook for 5 minutes. Add the wine, kraut, caraway seeds, and the juniper berries, cooking for 2 minutes. Add the stock, and the pork ribs, bring to a boil and reduce to a simmer. Cover and simmer for 40 minutes. Taste and adjust the seasonings. Apple Pork Chop Bake
Ingredients:
6 pork chops
1/2 ts salt
1/2 ts sage
2 tb butter or oil
1 md onion; slice
1/4 c instant flour
2 c apple juice; cider or beer
2 tb vinegar
1/3 c seedless raisins
3 apples; core; slice
1/4 c molasses
Prep:
Salt and sage chops. Brown chops in hot skillet in oil or butter. Place chops in casserole. Add onions to skillet and saute until tender. Place onions on top of chops. In skillet put juice and flour and stir to mix.
Add vinegar, molasses and raisins to skillet. Blend well. Pour over chops. Put apple slices on top. Cover tightly with foil and bake in 375~ oven for 45 to 60 minutes or 170~ internal temp.
