German Mustard Pork Chops (serves 4)
Ingredients
1. 1 - 2 tablespoon flour
2. 1/4 teaspoon salt
3. 1/8 teaspoon pepper
4. 2 slices bacon, diced
5. 1/4 onion, chopped
6. 2 medium, boneless pork chops
7. 1/4 cup sherry (also good with chicken broth)
8. 1 cup cream
9. 1 tablespoon German mustard (sweet or spicy)
10. 1 teaspoon Hungarian paprika
Mix flour with salt and pepper. Coat pork chops in mixture. Shake off excess flour. Fry bacon until crispy and drain. Saute the chopped onion in bacon fat. Move onion to the side and add pork chops to the pan. Fry 3-5 minutes on each side. Remove pork chops from the pan.
Add sherry to pan and scrape to remove the browned bits. Add cream, mustard, paprika, bacon and pork chops and cook for several minutes to reduce cream. Season to taste and serve with potatoes.

I'd suggest maybe braising them in a sherry reduction for approx. 10-20 mins then then season with some carraway seeds and NYC black pepper. Roast in oven for approx 30-45 mins on about 220-260 degrees C.Half way thru glaze with brown sugar and honey and let the pork chops baste.reduce some brown sugar and purred apples in a saucepan for about 10 mins . serve the chops with just a light summer salad or steamed vegetables and creamy mash. cheers
Don't dry them out. Make sure you do not overcook them on the stove. In the oven is better. Or on the grill. Brown them, then chill them, pop in the oven when almost ready for dinner. Or if you cook them on the stove, make sure you add som gravy so they do not dry out. Brown gravy and some sauteed onions is always good. Montreal would be good too! When you brown them, shingle them, top with gravy, and onions, then bake them off. Works everytime.
pork always goes well with an Acidic sauce apple/ plum.If 3 YO doesn't like he can just eat the pork OR the sauce.
Grilling or oven baking couldn't be easier.Just season with salt pepper and put a little oil on then put under grill.
Or do the same and then wrap in tin foil and bake 15-20 mins.
